Fried Plantain.
Ingredients:

  • 1 plantain.
  • 1 tbsp. of vegetable oil.
Directions:
Peal the plantain and cut in half, then cut those halves into slices, or round slices. Next heat the oil in a pan over medium high heat, and place the slices, turning them, once each side has turned golden, the plantain is fully cooked once the slices are tender. After the slices are cooked transfer them to a dish with paper towels to drain the excess oil. Serve the plantain with refried beans.


Refried beans.
Ingredients:

  • 1 can of red or black beans.
  • 1 tbsp. of vegetable oil.
  • 1 garlic clove.
  • 1/2 a small onion.
  • Salt to taste.
Directions:
Blend the whole can of beans along with the garlic clove, onion, and 1tbsp. of vegetable oil. Once all the ingredients have been blended, heat the remaining oil in a pan over high heat. Transfer the blended ingredients to the hot oil, and cook stirring from time to time until a almost dough like consistency is reached. Serve hot.


Pupusas.
Ingredients (for 16 pupusas):

  • 2 cups of corn flour (maseca).
  • 1 cup of melted mozzarella.
  • Two 1/3 cups of cold water.
  • 1 tsp. salt.
  • 1 tbsp. of vegetable oil.
Directions:
First mix in a bowl the corn flour and the salt, so that the salt is evenly distributed well through the whole flour, finish making the dough by adding the cold water. Then melt the cheese in the micro. Heat the oil in medium heat and now you are ready for preparing the pupusas. It takes approximately 2 tbsp. of dough and 1 tbsp. of cheese or filling to make each pupusa. Take 2 tbsp. of dough and make a round patty in your hand with a depression in the middle large enough for the filling. once the you place the filling which is 1 tbsp. of cheese or 1/2 tbsp. of cheese and 1/2 tbsp. of refried beans. Close the patty into a ball and flatten again with by using the palm of one hand and the fingers of the other hand in a turning motion. Once the filled patty is made place it in the heated pan and flip it on both sides after each side is fully cooked. Serve with repollo.


Repollo.
Ingredients:

  • 1 cabbage grated.
  • 1 onion grated.
  • 2 green peppers grated.
  • 1 carrot grated.
  • 1 jalapeno pepper (optional).
  • 1/2 cup of vinegar.
  • 1 tsp. of whole black pepper seeds.
  • 1 tsp. of oregano.
Directions:
After grating the cabbage apply plentiful salt and let sit for one hour. After the hour has passed squeeze the salted cabbage to remove excess water and salt then mix the cabbage with the rest of the ingredients including the vinegar and let sit for 2 hours. Serve cold with pupusas, enchiladas, and fried manioc root or yuca.



Totopostes.
Ingredients:
  • 2 cups of corn flour (Maseca).
  • 2 oz. of lard.
  • 1/2 a cup of grated dry cheese.
Directions:
Mix all ingredients well, until a dough is made. Using the palm of your hands make bight size balls, and place in prepared baking sheets. Then bake in the oven at 250° F, for 2 to 3 hours, or until the totopostes have gained a golden colour.


Halibut ceviche ( or any white meat fish).
Ingredients:

  • 3 lb. of fish filets.
  • 2 cups of lime juice.
  • 2 small onions diced.
  • 1 tbsp. of oregano.
  • 2 green peppers.
  • Salt to taste.
  • 1 tsp. of ground black pepper.
  • 1 can of seedless black olives.
Directions:
Cut the fish filets into 2 cm. cubes, and place in a glass or plastic container. Pour 1 cup of lime juice on the cubed fish and mix, sit for 15 min. While the fish is getting cooked by the lime (meaning the lime produces a reaction in fish that results in fish being cooked, without heat), dice the onions, the green peppers, and the olives,into strips. once all the ingredients are diced, remove the lime juice from the cubed fish and mix the cubes with all the ingredients, including oregano. Once all the ingredients are mixed, pour the remaining cup of lime juice and let sit for an hour in the fridge, then season with salt and pepper to taste. serve cold, with an even cooler beer.


Tortillas.
Ingredients:

  • 2 cups of corn flour (maseca).
  • 1/3 cups of cold water.
  • 1 tsp. of salt.
Directions:
Mix the corn flour with the salt, in order for the salt to be spread evenly throughout the corn flour. Once the the flour and the salt are well mixed, add the cold water and mix into a dough. Heat a pan in medium heat and make patties with the dough by using the palms of your hands, usually better if hands are wet. and place the patties in heated pan and flip until each patty is fully cooked. This dish is used with refried beans, avocado, or salt, and butter.
